Porosnusantaranews,BALIKPAPAN – Peta kuliner di Balikpapan kembali menggeliat. Pemain baru, La Gramma, resmi membuka gerai di kawasan Balikpapan Baru, Kamis (23/4/2026). Berlokasi di Jalan H Tjutjup Suparna, Kelurahan Damai, Balikpapan Selatan, kehadirannya langsung menyasar pecinta kopi sekaligus pemburu oleh-oleh.

Mengusung konsep specialty coffee shop, La Gramma tidak hanya menjual bakery. Mereka menawarkan pengalaman ngopi modern yang menyasar gaya hidup masyarakat perkotaan.

Produk unggulan tetap mengandalkan resep khas dari kota asal. Lapis legit premium menjadi andalan dengan varian original. Seluruh produk diklaim tanpa bahan pengawet.

Pemilik Afryandi mengungkapkan, nama La Gramma berasal dari kata “grandma” atau nenek, yang dipertahankan sebagai identitas brand sejak awal dirintis.

“Awalnya kami menggunakan nama Grandma’s Recipes, namun terkendala hak paten. Karena pelanggan sudah familiar, unsur ‘grandma’ tetap kami pertahankan,” ujarnya.

Menurutnya, sosok nenek menjadi inspirasi utama. Konsep tersebut dihadirkan untuk menghadirkan cita rasa rumahan yang autentik sekaligus memberi sentuhan emosional pada brand.



Ekspansi ke Balikpapan bukan tanpa alasan. Afryandi melihat kemiripan karakter pasar dengan Pontianak, terutama budaya ngopi yang kuat.

“Di sini orang minum kopi dari pagi sampai malam. Itu yang membuat kami yakin,” katanya.

Awalnya, ekspansi direncanakan ke Banjarmasin. Namun, saat singgah di Balikpapan untuk transit penerbangan, peluang justru dinilai lebih menjanjikan.

Akses transportasi menjadi pertimbangan lain. Rute langsung Pontianak–Balikpapan dinilai memudahkan distribusi. Selain itu, posisi Balikpapan sebagai pintu gerbang menuju Ibu Kota Nusantara (IKN) dinilai memiliki prospek besar.

La Gramma juga membawa misi mengangkat kue tradisional seperti lapis legit agar dapat bersaing dengan pastry Eropa.

“Kalau di luar orang minum kopi dengan croissant, kenapa kita tidak dengan lapis legit?” tegasnya.

Saat ini, La Gramma masih dalam tahap soft opening. Antrean pengunjung kerap terlihat, terutama pada jam awal operasional pukul 15.00 Wita.

Menu yang tersedia masih terbatas, meliputi kopi, lapis legit, dan beberapa bakery. Ke depan, mereka menargetkan penambahan hingga ratusan menu, termasuk pastry, kue kering, hingga makanan berat dengan konsep Indonesian bistro.

Grand opening dijadwalkan pada 5 Mei mendatang. Operasional penuh akan dimulai pukul 07.00–23.00 Wita, dilengkapi menu sarapan seperti bubur ayam hingga nasi goreng.

Dari sisi harga, produk yang ditawarkan relatif terjangkau. Americano dibanderol sekitar Rp28 ribu, cappuccino Rp30 ribu, dan minuman kemasan sekitar Rp35 ribu.

Afryandi memastikan seluruh kopi merupakan racikan internal dengan proses roasting sendiri.

Kehadiran La Gramma diharapkan turut mendorong perekonomian lokal. Saat ini tenaga kerja masih belasan orang, namun ditargetkan meningkat menjadi puluhan karyawan dengan mayoritas tenaga lokal.

Dengan perpaduan konsep tradisional dan modern, La Gramma optimistis mampu menjadi salah satu ikon kuliner baru di Balikpapan sekaligus memperkuat posisinya sebagai oleh-oleh khas Kalimantan. (mto)
